Also known as the “Scoville Scale”, the pepper heat scale measures the concentration of capsaicin, or “burn-your-tongue-and-blister-your-butt” factor. Hot sauces, hot peppers, hot tamales... anything spicy can be assigned a Scoville Heat Unit (SHU) value from 0 - 16,000,000.
